Bread is awesome. It really is. I'd go so far as to say that bread is *magically* delicious. With nothing more than water and flour, you can produce a food that's been sustaining humans since ancient Egypt.

I've got a small glass full of sourdough starter sitting on my counter (in what I wouldn't *quite* call a kitchen), and I've been making partially-yeasted rolls with it for the last few days. It's making my whole apartment smell vaguely of beer. I think the starter will be all fluffy by tomorrow, and then I can create the magic of bread whenever I want, with my symbiotically stable culture of bacteria and yeast :)

I don't think I'm going to buy bread from the store anymore. If I rely on them, and I run out on Friday or Saturday, I'm screwed. Besides, I can make a loaf that will last me a week for cheaper than the inconvenient four-day loafs at the supermarket. And a healthier loaf, too.

Bread, bread, bread, bread, bread.

Bread is delicious :D

Aw man, bread is awesome! Especially if you make ti yourself - try putting cut up black olives in a batch, or in another loaf, honey! There's tons of ways to mix it up, cheese!

Nothing to it but to do it, Ed. Equal parts water and flour, leave it out somewhere, and dump half and replace it with fresh water and flour every 24 hours, until the batter's bubbly and frothy (probably 3-7 days).

I've been using my "dump out" portion to make dinner rolls every night, just because I hate to waste it, but they've been coming out heavy and, well, unleavened. The bread I didn't put enough yeast into is coming out unleavened? Who'da thunk?

For now I'm just doing straight bread. A little salt, a little sugar, some oil. That's it. Once I have a decent starter, I'll start messing around... I've been thinking about putting in diced garlic, possibly sunflower seeds, experimenting with things like wheat and rye flour, but I can't do that all at once :-p. I'm taking it a step at a time, with a goal of baking at least two or three times each week.

oh bread is really good...
love doing some bread before but now i really don't have time to do it..
way back in my college times, they teach us to do some breads, a different kind of bread..
and it is really fun, and it is really taste good when you are the one who did it..

I kept at it for quite a while, actually. I maintained that goal of two or three times per week until roughly Passover, when bread became kind of a no-no. Coincidentally, my Spring semester started about the same time, and with the new class schedule I couldn't keep up the baking.

I would have had to kill the starter by now, though, 'cause I'm spending a few months with my parents before the army. Starters don't keep well when you're not refrigerating or maintaining them in any form for a period of four months :-p

I love bread, but not just a simple bread. There are so many bakeries with different type of breads, I prefer Japanese bread as well.
